ROSE+ KHUS SYRUP(HALDIRAM STYLE)

1.....2 cup sugar 2 cup paani mix keray, halka thick honay per 1 tsp pink/green food colour mix keray.

2.....1 taar ki chashni say thodi patli chashni banaye.gas off keray.

3..... Thanda honay per 2 tsp rose /khus essence mix keray.

4..... Glass bottle mai store keray.according to taste chilled milk mai dal ker serve keray.

PATTA GOBHI MATAR

PATTA GOBHI MATAR

1..... 1 kadahi mai 1 karchi oil garm keray, 1 cup matar,1/2 spoon each salt, haldi dalay.

2..... Dhuk ker rakhay,slow fire per, 5 min baad,1 medium patta gobhi chopped dalay.

3..... Dhak ker matar soft honay tuk, ya paani sookhnay tuk gas per rakhay.

4..... 3_4 tomatoes, 7_8 garlic cloves ka paste dalay mix keray. Paani sookhnay tuk bhoonay.

4.....1/2 spoon each red chill powder, dhaniya powder, 1/4 spoon garm Masala dalay.

5.....mix keray,5 min sim per dhuk ker rakhay.

6..... Serve it with garma garm roti.


TANDOORI SOYACHAAP MASALA(marinated)

TANDOORI SOYACHAAP MASALA

For MASALA/GRAVY

1.....1 cooker mai ,4 big peeled onion dalay ,1/4 glass paani dalay.

2..... Ek whistle day, steam nikal nay per,thanda honay per onion mixi mai pees lay.

3.....1 cooker mai ek big kerchi oil garm keray, 1/2 spoon jeera,2_3 each hari ilayachi ( tod ker),tej patta dalay.

4.....1 moti ilaychi (tod ker),2 piece each javitri,dalcheeni,1/2 jayephal(nutmeg)grated ,4_5 each whole kaali mirch,long,dalay.

5.....onion paste dalay,light brown karay.

6..... 6 tomatoes ,10_15 garlic cloves ginger 1 piece ka paste dalay.

7.....3/4 spoon each salt, degi mirch powder, 1/4 each haldi ,garm Masala, 1spoon dhaniya powder dalay mix karay.

8..... Oil chod nay tuk bhunay. 1glass paani dalay mix karay ek whistle day,aisa kernay say oil oper aa jata hai.

OVEN BAKED/TANDOORI SOYA CHAAPS

1.....1/2 kg washed soyabeen ki sticks nikal day, length wise chapay center say kaatay

2.....1 big bowl mai 125 gm. curd, 2 spoon ginger garlic paste,1/4spoon salt ,1/2 spoon degi mirch, 1 spoon chaat Masala, 1/4 spoon garm Masala, 1 spoon dhaniya powder dalay.

3.....1/2 big spoon oil dalay, Mix karay, 3_4 hour marinate karay.

4..... Preheated oven mai maximum power per brown honay tuk bake keray.

5..... Serve kernay k liye serving dish mai pahlay chaaps dalay oper say garma garm gravy dalay.

6..... Cream ya malai say garnishing keray .Serve it with roti or rice. Gravy mai according to taste panni dal saktay hai.

Note.....agar aap ki gravy mai  oily red colour nahi aaya hai to serving bowl mai nikay chaapay.

Phir ek pan mai 1/4 kerchi oil garm keray, 1/4 spoon Devi mirch dalay, spoon say mix keray, chaapo k oper dal day.

KAANJI VADA

For KAANJI

1.....2 kaali gajar peeled,chopped, 1 Lt paani,1 tbsp.each salt,black salt,3 tabsp.pisi rai sub ko mix keray.

2..... Glass jaar mai dal ker 3_4 din dhoop mai rakhay,daily heelatay rahay.

3..... Jitni khatti pasand ho utnay din dhoop mai rakhay

4..... According to taste,salt,rai (red chill powder optional) kum ya jayda dal saktay hai.

5..... Serve it chilled.

Note.....5 Lt paani mai 100 gm. Rai dalay.250 gm. Kaali Gajar dalay.

For VADA

1.... 1 Glass white dal bhigo day 3_4 hours .phir grind ker lay.

2..... Is batter mai 1/2 spoon each salt, saboot jeera, ek chutki  heeng powder dalay. Mix karay.

3..... Ab is batter ko double honay tuk food processer mai chopper mai blend karay.

4..... ASA karnay say batter double hoker light ho jaata hai, jis say vaday bahut soft bantay hai.

5..... Kadhi mai oil gram karay,chotay chotay vaday deep fry ker lay., light brown.

6..... In vado ko paani mai garm garm nikaal ker daal day. Jub tuk aur tul lay.

7..... Jub doosri baari k vaday ready ho jaye tub paani walay nikaal lay stainer may,saara paani nikaal day.or 2 nd baari walay vaday paani mai dalay.

8..... Paani nikal nay per vaday kaanji mai dal ker serve keray.

1.....1 kadhi mai 50 gm. Khuskhus bhunay crackle honay tuk,phir ismay 50 gm. Each chopped badam,50. gm magaj bhoonay.plate mai nikal lay.phir 250 gm. Khoya 5 min.bhoonay.

4.....gas off keray,phir is may 50 gm. each readmade coconut choora ( boorada) ,kishmish mix keray. saara dry fruit is may mix keray.

5..... Thanda honay per is may 1/2  katori ya according to taste powdered sugar mix keray.

6.....thanda honay per air tight container mai rakhay.

Note.....app is may,according to taste koi bhi dry fruit dal saktay hai like kaju.pista,akhrot,chironji etc.

1.....250 Gm.maida,50 gm.oil mai laghbhag 1/2 glass paani dal ker medium soft dough ready keray.

2.....1/2 an hour ka rest day.

3.....1 kadhi mai 50 gm. Khuskhus bhunay crackle honay tuk,phir ismay 50 gm. Each chopped badam,50. gm magaj bhoonay.plate mai nikal lay.phir 250 gm. Khoya 5 min.bhoonay.

4.....gas off keray,phir is may 50 gm. each readmade coconut choora ( boorada) ,kishmish mix keray. saara dry fruit is may mix keray.

6......dough ko thoda phir maslay,laghbhag 25 balls bana lay.

7.....poori belay,gujiya mold per rakhay,1 spoon khoya mixture bhary,mold tight bund keray.

8...... Extra dough side say hata day,side dough bhi use keray,isi tarah saari gujiya bana lay. 26 gujiya bani meri.

9..... Oil garm keray, gujiya pahlay high flame per phir slow fire per light golden brown keray.

1.....1/4 glass each rice,moong chilka dal washed, 3/4 glass paani mai ek saath bhigo day 3_4 hour bhigo day.

2..... Ya jaldi ho to bina bhigoye bhi bana saktay hai.

3..... Cooker mai rice dal,1/3 spoon salt, 1/4 spoon each red chill powder, haldi ,garm Masala dalay,mix keray.

4.....1 whistle day ,steam nikal nay per kholay.

5..... Serve it with mint chutney or curd.

5..... Beech beech mai heelaatay rahay.

1.....2 cup sooji mai 1/2 cup dahi ,1/2 spoon salt, paani or milk dal ker batter bana lay.

2.....1_2 hour rakh day,sooji fool nay tuk.

3.....1 grated beetroot mix keray batter mai.

4..... Taway per oil spread keray, 2 spoon batter taway per spread keray.

4..... Oil laga ker dono side say golden brown keray.

5..... Isi tarah saaray chillay bana ker serve it with mint chutney or tomato ketchup.

Note.....aap is may koi bhi veggies dal saktay hai like carrot, tomatoes, green chilli,hara dhaniya etc.

1.....2 cup sooji mai 1/2 cup each matar,curd,1each peeled, grated carrot ,beetroot.

2.....1/2 spoon salt, water or milk mix keray batter bana lay, idli batter say thoda thin.1/2 hour rakhay.

3.....appay pan gas per high flame per garm keray, thoda thoda oil brush say greesing keray .

4.....gas slow keray, jub appay bananay ho turant,4 pinch meetha soda, 1/4 spoon eno dalay mix keray.
