MINI RAJ KACHORI

MADE BY MY SON NISHKARSH GROVER

FOR KACHORI

1.....300 gm.sooji Mai 70 ml.oil,2 spoon maida,laghbhag 200 ml. Paani dal ker soft dough banaye.

2.....10 min.rest day,phir ek badi thin roti baley,phir kisi katori say circle mai cut lagaye.

3.....isi tarah saari poori bana lay, medium hot oil mai medium flame per light brown keray.

4.....thanday honay per ismay dahi bhalay dalaye,black salt sprinkle keray,moong sprouts,chopped boiled aloo,Boiled chaanay dalaye.

5.....phir say feti hui dahi,sonth, poodina chutney dalye,bhoona jeera powder,degi mirch powder sprinkle keray.

6.....besan ki boondi,haray dhaniye say garnishing keray.

7.....chaye to naylon sev,annar k dano say bhi garnishing keray.

FOR.....GUR KI MEETHI CHUTNEY( SONTH)

1.....250 ML paani pan mai lay,5,6 big spoon/400 gm.gur ,1/3 spoon each salt,black salt ,degi mirch, 1/2 sp bhuna jeera powder, 1/4 sp garm Masala dalay.

2.....2 spoon amchoor powder yaa imli paste dalay mix karay, gas per rakhay. Full flame per.

3..... Boil aanay per gas slow per rakhay. Thick honay tuk pukay.

4...... 1 spoon kharboojay k seeds bhi daal saktay hai. ( optional).

5..... Dahi bhalay k saath serve karay.

NOTE.....IS Chutni ko aap fridge mai ya fridger mai 1_2 month tuk rukh saktay hai.

Amchoor or gur according to taste rukh saktay hai.

Amchoor ki jagh imli ya imli paste( mother recipe ) bhi use ker saktay hai.

FOR MINT CHUTNEY

1..... Take 1 cup each coriander,poodina, 2 green chilli, 1/2 spoon salt, juice of 2 lemon,in a mixi jaar.

2..... Add 1/2 cup water in it & grind it.pour it in a  bowl.

3..... Kadahi mai oil gram karay,bhalay deep fry ker lay., light brown.

6..... In bhalo ko paani mai garm garm nikaal ker daal day. Jub tuk aur tul lay.

7..... Jub doosri baari k bhalay ready ho jaye tub paani walay nikaal lay haath say press karkey,saara paani nikaal day.or 2 nd walay bhalay paani mai dalay.

8..... Dahi 1 kg fati hui lay salt 1/2 spoon mix karay, bhalay dalay bhunay jeeray ,degi mirch powder ,besan ki boondi,poodina chutney,meethi chutney,haray dhaniye say garnish karay.

NOTE..... Garnish karnay mai aap dry fruits,annar k daanay bhi use ker saktay hai ya stuffing mai dry fruits bhi daal saktay hai.

FOR.....GUR KI MEETHI CHUTNEY( SONTH)

1.....250 ML paani pan mai lay,5,6 big spoon/400 gm.gur ,1/3 spoon each salt,black salt ,degi mirch, 1/2 sp bhuna jeera powder, 1/4 sp garm Masala dalay.

1.....1 kadahi mai 1 kadchi sarso ka oil smoking point tuk garm keray.

2.....1 big chopped gobhi ka Phool,2 peeled chopped aloo ,1/2 🥄 spoon each salt,haldi kadahi mai dalaye.

3..... Dhuk ker high flame per gobhi light brown keray,phir sim per rakhay.

4.....aloo cook honey per 1/2 🥄 spoon red chilli powder,1/4 🥄 spoon garm masala sprinkle keray.

5.....1/2 cup chopped hara dhaniya dalaye,mix keray,2 min bhoonay.

6..... Serve it with roti or rice.

3..... Cooker mai rice dal,2 🥄 spoon refined oil ya desi ghee 1/3 spoon salt, 1/4 spoon each jeera,red chill powder, haldi ,garm Masala,2 pinch heeng powder dalay,mix keray.

4.....20 gm.agar agar 1/2 cup paani mai mix keray,gas per melt keray.alag bowl mai juice gas per boil keray.

5.....juice mai agar agar ,70 gm. Sugar mix keray,ek boil aanay per gas off keray.

6..... juice Alag bowl mai dalaye,ek bowl mai 250 gm. malai lay, 2 🥄 spoon powdered sugar dalaye,ek bowl mai ice lay,uskay oper malai Wala bowl rakhay.

7..... whisker say beat keray, whipped cream ready,jayda beat naa keray,nahi to butter bun sakta hai.

8.....cream juice mai mix keray, 🥄 spoon say,plate mai celofin foil lagay,us per stick Wala watermelon circle rakhay.

2.....2 cup maida,1/2 cup 🌽 corn flour mix keray ek plate mai,1 cup milk ya egg wash lay ek bowl mai.

4..... Waffle maker oven mai dalaye,pahlay 10 min. High power per rakhay.phir waffle maker mai say waffle nikal ker oven ki tray Mai pult ker golden brown honey tuk bake keray.

5......plate mai pahlay Waffle rakhay,uskay oper chocolate sauce dalaye,side per vanilla ice cream rakhay.

2..... Bread slice cut karay, better mai dip karay deep fry karay.

3..... Serving dish mai pahlay bread pakoray dalay ,uper say garma garm aloo ki sabji , poodina chutney ,sliced onion daal ker serve karey.

ALOO KI SABJI

1.....4 big boiled mashed aloo lay.

2.....1 kadahi mai 1/2 kalchi oil dalay, 1/2 spoon each jeera ,kasoori methi ,2 green chilli chopped dalay.

3.....1 pinch heeng powder, 4 tomatoes ka paste, 1/2 spoon each salt, haldi,red chilli powder, dhaniya powder, amchoor powder dalay.

4.....1/4 spoon garm Masala, 1/4 cup chopped hara dhaniya dalay.oil chod nay tuk bhunay.

5..... Mashed aloo ,2 glass paani dalay, mix karay ek boil day, slow fire per 10_15 min rakhay.

1.....15 gm.agar agar mai 3 spoon panni dal k rakh day.

2.....1 pan mai 4 🥄 spoon sugar dalay,ek pinch salt,1/2 kg. Milk,200 ml.heavy cream boil keray,ek boil aanay per agar agar mix keray.

3.....150 gm.chopped choclate dalye ,stainer say chaanay,greese cups mai dalaye.

4..... Fridge Mai 4 hour minimum rakhay,best k liye overnight rakhay.

5.....1 Pan mai hot water mai cup ghumaye ,is say arram say nikal jata hai.

6..... Plate mai nikalay, oper say choclate sauce dalaye, strawberries say garnishing keray.

FOR CHOCOLATE SAUCE

1.....150 gm.grated choclate mai 100 gm.ceam dalye,double boiler mai ek boil day.

2.....room temperature per annay per ,ready to use.

LASAGNE

FOR WHITE SAUCE

1.....1 Pan mai 10 gm. Butter garm keray,10 gm./2 🥄 spoon Maida dal ker bhoonay,lakin Lal na keray,sirf halka saa bhoonay.

2.....100 gm. Dhoodh dalaye,lagataar hilatay rahay,halki sauce jaise thickness aanay per gas off keray.

3.....1 tsp.each salt,black pepper dalay,1 🥄 spoon origano,1tsp. spoon garlic powder,1 cheese slice dalaye,mix keray.white sauce ready.

FOR RED SAUCE

1.....1 pan mai,ek glass paani boil keray,3 tomatoes mai oper ki side cross mai cut lagaye,halka sa.10 min.boil keray.

2..... Phir tomatoes plate mai nikalay,tomatoes ki skin alag keray,chop keray.

3.....pan mai Jo paani bacha tha tomatoes boil kertay huye,usi paani mai, chopped tomatoes,5_6 chopped garlic ,1/3 spoon each salt,black pepper dalay.

4..... Tomatoes mash honey per,masher say mash keray.red sauce ready.

FOR LASAGNE SHEET

1..... Ek kadahi mai paani boil keray,1 🥄 spoon oil,1/4 spoon salt dalay 2 _ 2 ker k sheets boil keray,soft honay tuk,halka colour change honay tuk,halki badi honay tuk,boil keray.

2..... Plate mai nikalay,oil say brushing keray,isi method say total 8 sheet boil keray.

FOR VEGETABLES

1.....1 Kadahi mai 3_4 spoon oil ya butter garm keray,1 packet chopped mushrooms,2 each chopped onion, capsicum dalaye,2_4 min. Saute keray.

2.....gas off keray,1/3 spoon salt,1/4 spoon black pepper,2 🥄 spoon grated cheese dalaye mix keray.

Note..... according to taste aap koi bhi veggies dal saktay hai like red ,yellow bell pepper,sweet 🌽 corn, brokali etc.

FOR ASSEMBLING

1..... Oven proof dish mai pahlay ek layer white sauce ki lagaye,phir 2 lasagne sheet lagaye.

2.....phir sliced paneer ki layer ,halka sa salt& black pepper powder sprinkle keray,phir veggies ki layer,red sauce ki layer,white sauce ki layer,cheese slice ki layer,grated mozerrela cheese ki layer lagaye.

3..... Isi method say layers repeat keray according to your bowl level.

4..... Last layer Mai mozerrela cheese k baad Cheddar cheese ki layer lagaye.

5.....high power per ,pre heated oven mai dalaye,cheese halki brown  honey tuk bake keray.

6.....bowl bahar nikalay,knife say kaat ker plate mai serve keray.

3.....1/4 spoon garlic powder ya grated fresh garlic,2 🥄 spoon each  🍋 lemon juice ,refind oil dalaye,mix keray.

4..... Greased tray Mai aloo dalaye,pre heated oven Mai high power per 40_50 min.ya crispy honey tuk bake keray.

5...... Serve it with mint dip or chutni.

1.....1 कटोरी फेटी हुई दही (दही में हैंडी चला ले या छननी से छान लें) 2 चुटकी काला नमक मिलाये, 1/3 कटोरी नमकीन मिलाये,चम्मच से मिलाये (मिक्स करे) |

२.....देगी मिर्च, भुना जीरा या चाट मसाला से सजाये, परोसे |

आप भुजिया की जगह कोई भी नमकीन मिला सकते हैं |
