1.....8_10 Boiled, peeled,mashed aloo mai 1/2 spoon salt, 1/2 cup arrarot mix keray.

2..... Gas per tawa rakhay,oil garm keray,oil dalay,garm keray,aloo ko balls ki shape day.

3..... Oil mai dalay,dono side say golden brown keray,plate mai nikalay.

4..... Glass KI help say balls ko flat keray phir oil mai dalay, dono side say golden brown keray.

5..... Crispy tikki plate mai dalay, curd ,meethi sonth,kala namak degi mirch,bhoona jeera powder,boondi dal ker serve keray.

1.....1 Glass moong chilka dal 4_5 hour bhigo ker peese lay.

2.....1/2 spoon salt dalay mix keray, kadahi mai oil garm keray.

3..... Dal k bhalay deep Fry keray golden brown.

4..... Plate mai nikal lay, paani mai bhigo day, soft honay tuk.

5..... Nichod ker serving bowl mai dalay,oper say fati hui dahi dalay.

6.....meethi sonth,dhaniya chutney, boondi,kala namak bhuna jeera powder, degi mirch say garnish keray.

1.....readymade batter lay,ya1 glass urad dhuli dal lay,2 glass rice lay,1sp mehi Dana lay dho ker morning mai bhigo day.

2.....raat ko pees lay, 1 sp salt dalay,mix it,dhuk ker rakhay ,subh fermentation ho jayagi.

3.....1each peeled grated beetroot,carrot, 1 cup peas half batter mai dalay mix keray.

4.....ek nonstick tawa lay oil lagaye Zara sa kisi,cloth say ya onion say pooray taway per spread keray.

5.....phir halka sa gas per garm ker lay,ek kalchi batter lay,or spread keray.

5..... phir 2sp oil dalay neechay say light brown karay,phir turn keray slow fire per cook keray.

6..... Cook honay per sambhar k saath serve karay.

Note.....Nonstick taway per, bilkul halka sa tawa garm keray,oil spread keray, half onion cut keray,onion say taway per oil phalaye thoda onion press kertay huye,jayda garm say  sahi nahi banta.


KADI WITH DAL PAKORAY

KADI WITH DAL PAKORA

1..... ek cooker mai 3/4 kg curd ,2 Lt. Paani,1 spoon salt, 1/2 spoon each red chilli powder, haldi, garm Masala, 1 big spoon ( kalchi) besan lay.

2.....hand blender say blend karay, koi lumps nahi rahnay chaiyey

3..... Gas per high flame per rakhay, boil annaye per gas slow fire per rakhay,

4..... 1__1 1/2 hour k liye rakhay,ya kadhi ki consistency aanay tuk.gas off karay.

URAD CHILKA DAL K PAKORAY

1.....1/2 glass urad chilka KI dal washed,4_5 hour k liye bhigo day.

2..... Mixi mai pees lay,1/3 spoon salt mix keray.

3..... Kadahi mai oil garm karay,dal ki balls bana ker oil mai dalay,
golden brown karay.

4..... Kadhi mai dalay according to taste jitnay pasand ho)

5.....10_15 min slow per rakhay.

6....ek pan mai 1/2 big spoon oil lay, garm honay per, 1 spoon  jeera,6_7 dry hole red chilli, 15_20 karri pattay dalay(optional)

6..... Kadi mai dalay ,rice k saath serve karay.

VERMICELLI PULAV

VERMICELLI PULAV

1.....1 kadahi mai 1/2 karchi oil garm keray,1 spoon sarso Dana,10_15 curry leaves.

2.....4_5 dry red chilliy dalay,2 sliced onion ,200 gm.vermicelli, 1 cup matar ,1/2 cup chopped capsicum. dalay .

3..... Vermicelli light brown honay tuk bhunay,3/4 spoon salt,1/4 spoon red chill powder dalay,mix keray.

4.....1, 1/2 glass paani dalay,ek boil aanay per dhuk ker sim per rakhay. Paani sookh nay tuk.

5..... Serve it with mint chutney or tomato ketchup.


Note.....aap is may koi bhi veggies dal saktay hai like carrot, capsicum,sweet corn ,cabbage etc.

HOMEMADE CHEESE PIZZA

1.....1 1/2 cup Luke warm water mai 4_5 gm. Yeast ,1 tbsp sugar dalay.whisker say whisk keray.

2.....15 min ka rest day.phir ismay 1 cup maida dalay,2 tsp each olive oil & butter dalay.

3.....12 chopped garlic , 1 tbsp origano,1 tsp salt ismay dal ker whisk keray jub tuk ki thick naa ho jaye.

4.....is batter mai 1 1/2 cup maida dal ker soft sticky dough haath say banaye.

5..... Phir kitchen slap per sookha maida spread keray ready dough is per rakhay.

6..... Phir 15 min isay haath say goonth tay rahay,2 tbsp oil spread keray is per ,phir 5 min doobara goonthy.

7..... Is say gluton develop hota hai jis say acchay say phoolta hai.

8..... Phir kisi cloth say dhuk ker kisi big bowl mai fridge mai 10_ 15 hour rakhay,cold firmantation k liye.

9..... Phir dough double honay per bahar nikalay, slap per 1 min phir goonthy.

10.....4 equal part mai dough knife say divide keray,4 balls bana lay. Kisi cloth say 10 min rest day.

11..... Dough phool jayega,10 min 230 celicious degree pre heated oven ready keray.

12..... Greesed tray mai origano ,salt sprinkle keray, makki ka sookh atta kitchen slap per spread keray phir balls ko circle moti roti ki shape day, makki k attay ki help say,haath ki hathali say.

13.....phir isay, tray mai  rakhay.

14.....is circle k oper butter ,tomato sauce,grated cheese ,salt, origano, spread keray.

15.....7_10 min tuk 230 degree celcious per oven mai bake keray.

16..... Golden brown honay per serve keray.

1.....2 Cup sooji moti wali lay,pan mai sim per dry roast karay ,halki khusbu aanay tuk,plate mai nikaal lay.

2.....kadhi mai 2 kalchi oil lay 2 sp sarso Dana crackle karay, 15_20 kari patay,,7,8 dry red chilli, 2,2 sp bheegi chana dal,urad dhuli dal,1/2  cup frozen matar , Peanut 4 sp ya apni pasand ki koi bhi veg like carrot capsicum sweet corn etc dalay light brown karay.

3.....1,2 sp salt ,bhuni sooji dalay,4 cup paani dalay mix karay ek boil aanay per dhuk ker sim per paani sookhnay tuk,ya  sooji phool nay tuk dum per rakhay.

4.....Ek katori lay spoon say usmay UPMA dalay upper tuk spoon say flat keray halkay haath say press karay.

5.....serving dish mai katori ulti ker day ,pichay ki side say katori ko halkay haath say thup thapaye UPMA bhar aa jayega.

6.....plate mai leftover upma lay,thoda paani dalay mix keray, makki Kay attay ki tarah.

7..... Non stick taway per oil lagaye thoda sa  UPMA lay taway per haath say phalaye (press keray).

8..... Dono side say oil lagaye, golden brown keray.

9.....tomato green chilli say garnish karay, serve it with sambhar, nariyal chutney or mint chutney.

2......1 chota bunch washed, chopped bathuya 1/2 glass paani mai 5 min boil kerye.

3.....ya 5_10 min microwave mai boil keray,thanda keray ,nichod lay.

4...... Curd mai mix keray, degi mirch , bhuna jeera powder say garnishing keray.

1.....1 cooker mai 1 big spoon oil lay, 1 chopped onion dalay light brown karay.

2.....2 tomatoes, 7_8 garlic cloves ka paste bana ker onion mai dalay, salt ,dhaniya powder 1/2 spoon each, 1 spoon degi mirch powder.

3.....1/3 spoon each haldi, garm Masala, dalay, oil chod nay tuk bhunay.

4.....2 packets mushroom ka chopper mai keema ( fine chopped) bana lay.

5..... Cooker mai dalay, 1/2 cup each matar , paani dalay mix karay ek whistle day.

6..... Steam nikalnay per serve with it roti or rice.

3.....2 chopped aloo kadahi mai dalay 1/4 spoon each salt, haldi dalay.

4..... Dhuk ker aloo soft honay tuk cook keray, slow fire per.

5...... Aloo soft honay per 1/4 spoon each red chilli powder, garm masala,1/2 spoon dhaniya powder dalay.

6..... Mix keray 2 min bhoonay, serve it with garma garm roti or rice.

2.....1 karchi ghee,7 Hari ilayachi kuti hui,1 cup kishmish saaray ingredients with water cooker mai dalay.

3..... Mix keray, ek whistle day steam nikal nay per kholay mix keray.

4..... Serve it hot.

1.....1/2 Kg fresh soyabeen chaaps wash keray

2..... Chaaps ko deep fry keray,golden brown honay tuk, plate mai nikal lay.

3.....1 cooker mai ,4 big peeled onion dalay ,1/4 glass paani dalay.

4..... Ek whistle day, steam nikal nay per,thanda honay per onion mixi mai pees lay.

5.....1 cooker mai ek big kerchi oil garm keray, 1/2 spoon jeera,2_3 each hari ilayachi ( tod ker),tej patta dalay.

6.....1 moti ilaychi (tod ker),2 piece each javitri,dalcheeni,1/2 jayephal(nutmeg)grated ,4_5 each whole kaali mirch,long,dalay.

7.....onion paste dalay,light brown karay.

8..... 6 tomatoes ,10_15 garlic cloves ginger 1 piece ka paste dalay.

9.....3/4 spoon each salt, degi mirch powder, 1/4 each haldi ,garm Masala, 1spoon dhaniya powder dalay mix karay.

10..... Oil chod nay tuk bhunay. Chaaps dalay 1glass paani dalay mix karay ek whistle day.

11..... Serve it with roti or rice. Gravy mai according to taste panni dal saktay hai.

Note.....agar aap ki gravy mai  oily red colour nahi aaya hai to serving bowl mai nikay chaapay.

Phir ek pan mai 1/4 kerchi oil garm keray, 1/4 spoon Devi mirch dalay, spoon say mix keray, chaapo k oper dal day.

PHOOL GOBHI KA AACHAR

1.....1 phool gobhi ko chotay tukrao mai chopped ker lay, is say khaanay mai easy rahta hai.

2.....Ek glass jar mai phool gobhi 1/2 spoon each red chilli powder salt , haldi,2 big spoon each pisi rai, sarso oil dalay.

3.....Jar ka lid bund karay, jar shake karay,3_4 din dhoop mai rakhay, ready.

4.....Is aachar ko aap fridge mai 1_2 saal tuk rukh saktay hai.

NOTE_____ ISI Method say aap onion, chillies, shalgum , carrot ka pickle bhi daal saktay hai.

1.....1 Glass Sotabeen dal 3_4 hour bhigo day phir pees lay.1/2 spoon salt,4 spoon besan mix keray.

2.....1 nonstick tawa garm karay, 1 spoon oil falaye , dal k cheelay bana lay, oil luga ker dono side say light brown karay.

3..... Serve with sauce or mint chutni.

Note.....app ismay apnay taste ki according koi bhi veggies dal saktay hai like hara dhaniya, hari mirch,grated carrot,capsicum, sweet corn etc.

FRIED ICE CREAM

1.....1 Vanila ice cream hard brick 700 gm. Lay 10 pieces mai square cut keray .

2..... Cornflakes lay mixi mai grind keray,plate mai nikaye,ice cream pieces per fold keray.

3.....1 hour freezer mai rakhay,1 spoon maida 1 katori paani mai ghol ker batter bana lay.

4..... Ice cream pieces batter mai dip keray, phir say crushed cornflakes mai pieces fold keray.

5..... Poori raat freezer mai rakhay, serve kertay time ice cream pieces garm oil mai 10 sec.deep fry keray.

6..... Turant he serve keray.

1.....1 1/2 Glass chanay ki dal 5_6 hour k liye bhigo day.

2..... Mixi mai peesay,1/2 spoon salt mix keray.

3..... Garm oil mai batter k gol gol pakoray(ladoo) bana lay.

4..... Pahlay half fry nikal lay yaani light brown keray.

5.....jub serve kernay ho tub doobara deep fry keray,is say crispy bantay hai.

6..... Serve it with grated mooli gajar ,mint chutney, sonth.
