MASALA OPEN BHINDI

1.....750 Gm bhindi wash karay, length wise half cut karay.

2..... Paani bilkul sukha lay,fan k neechay rukh day.

3.....kadahi mai ek Karachi musturd oil lay, smoking point per bhindi dalay.

4.....1/2 spoon each salt, haldi, dalay, light brown karay, 1/2 spoon each red chilli powder ,amchoor powder dalay.

5....mix karay,according to taste bhindi kum ya jayda brown karay.

6..... Serve it with garma farm roti.

Note.....aap is may amchoor ki jagh 2 spoon imli paste bhi dal saktay hai.


CHILLI SOYA CHAAP

CHILLI SOYA CHAAP

1.....500 gm. fresh soya chaap wash karay, length wise half cut karay, phir teen pieces mai cut karay, yaani ek chaap k 6 pieces.

2..... Deep fry karay ,golden brown karay. Isi kadahi mai 1/2 Karachi oil chod ker baaki nikal lay.

3.....8_10 chopped garlic cloves ,1 big onion square cut dalay,2 min sautay karay.

4.....2 big spoon schezwan sauce,1 big spoon each tomato ketchup,soya sauce,1/2 spoon salt dalay,mix karay.

5.....1 spoon cornflour ,1/2 cup paani mai ghol ker dalay,kadahi mai,chaaps dalay.

6..... Mix it, according to taste gravy rakhay.

7..... Serve it hot with 1 lemon juice.garnish it with roasted til.

Note.....according to taste koi bhi veggies dal saktay hai ,like capsicum,spring onion,carrot etc.

1.....1 Kadahi mai ek kadachi oil lay,4 chopped onion light brown karay.

2.....4 tomatoes, ginger ek small piece,8_10 garlic cloves ka paste onion mai dalay.

3.....1/2 spoon each salt ,red chilli ,dhaniya piwder,1/4 spoon each haldi,garm Masala dalay.

4..... Oil chod nay tuk bhunay,gas off karay,Masala thunda karay.

5..... Mixi mai Masala, 1 glass dhoodh dalay paste bana lay.

6..... Kadahi mai Masala nikalay,ek boil day,250 gm paneer kaat ker dalay,ek boil day

7..... Serve ker nay say pahlay 1/2 cup malai paneer mai dalay, ek boil day.

8..... Serve it with garma garm naan or roti.

BREAD GULAB JAMUN

1.....10 Bread slice without corner, 2 cup doodh mai dip keray one by one .

2..... Squeeze karay,7_ 8 spoon milk powder dalay, soft dough ready keray.

3..... Balls bana ker deep fry keray,golden brown, medium flame per.

4.....400 gm.sugar mai,2 cup paani, dal ker ek taar ki chashni banaye,1/4 spoon elayachi powder dalay,ek boil day , gas off karay.

5.... balls dal ker 40_50 min rakhay.

6.....gulab jamun ready hai ,serve it hot or chilled.

Note

1.....balls banatay time cracks lugay to milk powder k saat thoda sa doodh dalay.

2.....gulab jamun bun nay k baad dry lugay to ek boil day with sugar syrup.

BESAN KI PINNIYA

1.....ek kadahi mai 1 1/4 cup desi ghee lay,melt karay.

2.....2 cup mota besan dalay,medium flam per besan light brown karay, khshboo aanay per,2 spoon paani ka chinta day.

3..... Bhunay paani sookhnay tuk ,is say pinni danaydar banti hai, gas off karay.

4..... Besan itna thunda keray jisay hum aasani say haath mai lay sakay.

5.....3/4 cup powdered sugar ,1/4 spoon green ilayachi powder dalay mix karay.

6..... Chaaye to 1/4 cup kajoo k pieces dalay.

7..... Apni ichaa say pinniyo ka size banaye.

8..... Badam say garnish karay.

Note..... 1.....Ye pinniya 1_2 month tuk kharab nahi hoti, thundi ker k air tight container mai rakhay.

2.....Besan poora thunda na karay.

3.....Aap is may according to taste kou bhi dry fruits dal saktay hai .

TASTY TASTY CHANA DAL

1.....1/2 glass chana dal wash karay, bhigo day,1 Lt. Paani mai.

2.....cooker mai dal with water,1/2 spoon salt, 1/4 spoon haldi dalay.

3..... 1 whistle day, 10 min sim per rakhay,gas off karay.

4.....1 pan mai 1/4 kadachi oil lay, 1 medium chopped onion dalay,2 chopped green chilli dalay light brown karay.

5..... 2 tomatoes ka paste dalay,1/4 spoon each red chilli powder, garm Masala powder 1/4 cup hara dhaniya ( optional)dalay.

6..... Mix karay , oil chod nay tuk bhunay.dal mai dalay,phir say ek whistle day.

7..... Steam nikal nay per, serve it with roti or rice.

Note..... Panni or dry masalay according to taste kum ya jayada bhi dal saktay hai.

3.....MATHRI ,namkeen banatay time thodi sooji dalay.

4.....KACHORI banatay time attay mai thodi sugar dalay ,jayda time tuk fooli fooli rehayegi .

5.....ATTAY K HALWAY mai chutki bhar sonth powder dalay.

6.....GUJHIYA mai yadi kgoya kum ho to roasted peanuts powder dalay.

7.....BASEN K CHILLAY mai ginger garlic paste dalay.

8.....COOKER jal gaya hai to poori raat paani bher ker rakhay, phir khanay walay soday say ya sirkay say saaf karay.

9.....COOKER mai aloo ya idli pakatay time used lemon chilkay dalay, nishaan nahi pedaye gay.

10.....LEMON PICKLE kharaab honay lugay to thoda sirka daal ker pakaa lay.

1.....1/2 kg maida ,1 1/2 cup cornflour, 1/2 spoon salt according to taste bowl mai lay, paani dal ker better banaay .

2.....1 each cabbage, carrot,capsicum, 15 cloves grate karay.

3.....kadahi mai 2 spoon oil lay, veggie dalay, 1/2 cup bheegi dhuli moong dal bhi dalay , paani sookhnay tuk bhunay.

4..... Plate mai thanda keray,1/2 spoon

salt, black pepper powder dalay mix karay.

5..... Nonstick taway per greesing karay,ek kadachi maiday ka better falaye.

6.....jub side chodnay lagay , poney say uttar ker dekhay jub easily uth jaye to plate mai nikal lay.

7.....ek hi side say cook kerna hai,isi  tarah saray pan cake ( like chilla)bana lay.1/2 cup better rukh lay.

8..... Plate mai ek chilla lay ,stuffing ya taway ko plate per ulta ker Kay ,chilla nikal lay, sides say halka halka fold karay,phir tight fold ker k roll bana lay.

9..... Maiday kay batter say side chipka lay,isi tarah saaray roll bana lay.

10..... Saray roll deep fry karay,light golden brown.

11..... Kaat ker mint chutney,momo's ki chutney k saath serve karay.

Note.....1......chilla bananay k turant  baad garm garm mai hi filling bher tay jaye,nahi to toot jatay hai.

2.....Chillay bilkul bhi brown na karay,sirf jaisay he halki si side chutay,chilla uttar lay.

3.....Jitna possible ho utna thin say thin chilla banay.

1.....1/2 glass arrhar ki dal wash karay,bhigo day.cooker mai dalay,1/2 spoon salt, 1/4 spoon haldi dalay.

2.....1 whistle day,gas off karay,steam nikal nay per lid kholay.

3.....1 pan lay, 1/4 kadchi oil dalay,garm honay per 1/2 spoon rai dalay,crackle honay per, dal mai mix keray.

4..... According to taste imli paste ya amchoor powder dalay,mix karay.

5..... Serve it with roti or rice.


BACHELOR'S CHILLI VEGGIES RICE(left over)

1.....leftover rice ek boil lay.

2..... Ek kadahi mai 1/2 kadachi oil lay,ek slice onion (ek_ek capsicum, carrot, small grated cabbage , 2 spoon ginger garlic paste optional) dalay.

3..... 4_5 min bhonay, 2 spoon schezuon sauce ya momos chutney dalay.

4..... According to taste salt dalay, mix karay.

5..... Isay aisay hi garma garm khaye ya Serve it with Chinese schezuan paneer .


CHINESE SCHEZUAN PANEER

PANEER CHINEESE SCHEZUAN CHILLI

( My style paneer schezuan with chilli rice)

1.....250 gm paneer cut keray.1/2 cup maida,2 spoon cornflour ,1/4 spoon salt bowl mai lay,paani dal ker better bana lay.

2..... Pakoray jaisa, paneer dal ker pakoray deep fry karay,light golden brown.

3.....1 kadahi mai 3 1/2 glass paani dalay,ya according to taste dalay,ek packet knorr Chinese schezuan,ek packet knorr Chinese chilli ka dalay.

4.....50 Rs each wala packet, kadachi say mix keray taaki lumps na rahay.

5..... Phir gas per rakhay, ek boil aanay per according to taste gravy ki thickness rakhay.

6...... Paneer k pakoray dalay,ek boil day.

7..... Serve it with chilli rice,fried rice or chilli chowmein.

1.....boiled, grated aloo 500 gm.,1/2 spoon each red chilli ,salt,gram Masala, dried mint powder,a pinch heeng powder.

2.....3 cup besan ,1 spoon chaat Masala sabko mix karay, is ka medium hard dough ready ho jayega .

3.....thoda thoda dough namkeen bananay wali machine mai dalay.

4..... Kadhahi mai oil garm karay,medium hot oil mai fry karay, light golden brown.

5.....isi tarah saari namkeen bana lay.

6..... Butter paper per nikaly ,thanda keray,air tight container mai rakhay.

7..... Serve it with lemon juice & chaat Masala. 

CHUTPATTI MASALA ARBI

1.....1/2 kg arbi peel keray, circle mai slice katay.

2.....kadahi mai 1/2 kalchi oil ,2 chopped onion, 2 green chilli,dalay.

3..... Transparent honay per arbi,1/2 spoon each salt,haldi dalay, dhuk ker,slow per , soft honay tuk pakaye.

4..... 3 chopped tomatoes, 1/2 spoon each red chilli, dhaniya powder, 1/4 spoon garm Masala dalay.

5..... Dhuk ker 5 min slow fire per rakhay.

6..... Serve it with garama garm roti.

3.....1 pan mai 1/2  big spoon oil dalay ,1 chopped onion, 3 chopped green chilli , 8_10 chopped garlic cloves dalay.

4..... Light brown karay, 4 tomatoes ka paste, 1/2 spoon red chilli powder ,1/4 cup chopped hara dhaniya dalay.

5.....oil chod nay tuk bhunay. tadka dal mai dalay, ek boil day.

6...... Serve it with roti or rice.

2..... Kadahi mai 1/2 kalchi sarso ka oil dalay,smoking point per, 2 chopped onion, karelay dalay.

3..... Gas slow fire per rakhay, 1/4 spoon each haldi, salt,red chilli powder ,1/2 spoon dhaniya powder dalay.

4..... Light brown karay, 2 spoon imli paste dalay, 4_5 min bhunay.

5..... Serve it with garma garm chaapati .

2.....RAITAY mai 2_3 long ka powder dalay.

3.....ATTAY kay ladoo banatay time thoda sa singharay ka atta bhi dalay.

4.....GULAB JAMUN mai 1_1 kishmish rakhay fluffy benayegay.

5.....DAHI BADAY banatay time thoda sa fresh grated coconut dalay.

6.....ALOO k chips boil kartay time kala namak,or kaali mirch powder dalay.

7..... ICE CREAM banatay time thoda sa milk powder dalay.

8.....GREEN VEGGIES ko dhukay bina banaye.

9..... DHOKLA banatay time dahi na ho to milk or panni mix ker Kay use karay.

2.....1 kadahi mai 1/2 big kadchi oil lay, 2 big chopped onion, 3 green chill chopped, light brown karay.

3.....4 big tomatoes ka paste dalay, 1/2 spoon each haldi, salt,red chilli powder, dhaniya powder, 1/4 spoon garm Masala dalay.

4..... Oil chod nay tuk bhunay. Nutri dalay, dhuk ker slow per oil chod nay tuk bhunay.

5..... Garnish it with green corriender.

3.....readymade roomali roti ya ghar ki roti lay, ready made momos chutny ,mint chutney ,onion slice lagaye.

4.....us per 2 chaapay rakhay,chaat Masala dalay,roll keray ,grama gram khaye.

5..... Isi tarah saaray roll ready karay.

 Note.....ismay app chaye to koi bhi veggies dal saktay hai like carrot,cabbage,capsicum.

Chaye to paneer tikka ki tarah chaaps marinate ker ker deep fry, ya tandoor ker Kay bhi roll bana saktay hai.

1st time mai kerla gai,wha mainay ye dish seekhi waha k cook say,to soccha aap say share karoo, wahi Kerala say hi send ker rahi hu recipe, wasay mai new Delhi mai rahti hu.

1.....1 cup chopped each yam( jimikand), raw banana,carrot, beans,peas,ghiya patilay mai dalay.

2.....1/2 spoon salt,1/4 each haldi, red chilli powder dalay, dhuk ker cook honay tuk gas per rakhay.

3.....lid open keray,4_5 spoon imli paste, 15_20 curry leaves,1 spoon coconut oil, 1 big bowl grated coconut dalay.

4.....2 min gas per rakhay mix karay. Serve it with dosa or poori, chappati.

Note.....aap ismay koi bhi veggies dal saktay hai but avoid bhindi,baigan,kerla.

1..... Attay mai say ek ball( gola) bana lay, sookha atta luga ker beley

2.....1 spool oil ya ghee spread karay, according to taste salt,red chilli powder dalay.

3.....according to pic pahlay half fold karay, again half fold karay.

4..... Sookha atta luga ker balay.jitna patla aap chaye,taway per dalay.

5..... Oil ya ghee luga ker both side say golden brown karay.

6..... Serve it with curd or any dal,sabzi.
