FOR OUR 25 TH SLIVER JUBLI LOCKDOWN ANNIVERSARY
FOR CHOLAY ( DRY MATAR)
1.....1/2 Kg dry matar( peas) 6_7 hour k liye bhigo day, ek cooker mai dalay ek whistle day,20 min slow fire per rakhay.
2.....Gas off karay,Steam nikal nay per ,bowl mai dalay,1 chopped onion, 2 tomatoes chopped, 2 green chilli chopped.
3.....2 boiled aloo chopped bowl mai dalay, 3/4 spoon salt, 1/2 spoon each red chilli, bhuna jeera powder, chaat Masala, amchoor powder dalay.
4.... 2 lemon ka juice,2 spoon mint chutney,2 spoon sonth/ meethi chutney dalay mix karay, garnish with hara dhaniya.
NOTE.....App is may kheera ,kakri bhi daal saktay hai.usmay amchoor powder ki jagh imli paste ,dhaniya chutni bhi daal saktay hai.
FOR KACHORI/BIG PAPDI
1.....2 katori maida,1 katori Multigrain atta,1kerchi refined oil,1/2 spoon ajwain,1/2 spoon salt,1/2 katori sooji sabko mix kerey.
2.....thoda thoda paani dal ker tight atta gonthy,ek ghanta geelay kapdey sey dhak ker side per rakhey.
3.....phir attay mai say ek ball/peda ley,badi patli sey patli roti belay,kisi gol cutter ya katori say cut laga ker big papdi ki shape dey,extra atta nikal ley.
4.....chakoo say papdiyo mai cut lagaye taaki papdiya phoolay nahi,crispy baney,garm oil mai medium flame per dono side say golden brown keray.
5.....isi tarah saari big big papdiya bana lay,thanda keray,khanay k liye tyaar hai.
6.....aap isey 8_10 dino k liye air tight container mai store bhi ker saktay hai.
7..... in papdiyo ko matar ya chai k saath serve kerey ya bhalyo k saath ya bhel poori ya Surti aloo poori,ya moth kachori bana ney mai istemal kerye.
HOW TO SERVE
1.....ek plate mai 4 big kachori/papdiya rakhe oskey oper 2 spoon ready dry matar rakhye.
2..... according to taste podina chatni,saunth,onion rings, beetroot laccha,ginger laccha dal ker serve keray.
