1.....1/2 Kg dry matar( peas) 6_7 hour k liye bhigo day, ek cooker mai dalay ek whistle day, 10 min slow fire per rakhay.

2.....  Gas off karay,Steam nikal nay  per ,bowl mai dalay, 1 chopped onion, 2 tomatoes chopped, 2 green chilli chopped.

3.....2 boiled aloo chopped bowl mai dalay, 3/4 spoon salt, 1/2 spoon each red chilli, bhuna jeera powder, chaat Masala, amchoor powder dalay.

4.... 2 lemon ka juice dalay mix karay, garnish with hara dhaniya, served with kulcha.

NOTE.....App is may kheera ,kakri bhi daal saktay hai.usmay amchoor powder ki jagh imli paste ,dhaniya chutni bhi daal saktay hai.

3.....Jar ka lid bund karay, jar shake karay,3_4 din dhoop mai rakhay, ready.

4.....Is aachar ko aap fridge mai 1_2 saal tuk rukh saktay hai.

NOTE_____ ISI Method say aap onion, gobhi,  shalgum , carrot ka pickle bhi daal saktay hai.

4.....1 cup frozen matar ,daliya with water dalay mix karay, ek whistle day.

5..... Steam nikal nay per serve karay with chopped hara dhaniya.

NOTE..... App is may koi bhi veg daal saktay hai like carrot, capsicum, sweet corn etc.

1..... 1 Cup desi ghee kadhai mai lay,1 cup atta dalay light brown karay, medium flame per.

2..... Ya dhoda time full thoda time slow fire per rakhay.

3.....1 1/2 cup paani dalay saath hi turant 1/2 cup sugar dalay, mix karay oil chod nay tuk, ya jub kadhi poori clean ho jaye or halwa ikhtha ho jaye tub tuk bhunay.

4..... Gas off karay ,garnish with almond.

NOTE..... 1..... Gurudwaray k liye prasad banana hai to dry fruits nahi daltay.

2..... Hamesha pahlay paani dalay phir sugar.nahi to theek nahi banagaya.

1..... cooker mai 1 badi spoon ( kalchi) oil lay, 1 chopped onion dalay, light brown karay.

2.....4 tomatoes, 8_10 garlic cloves, ginger ek piece ka paste bana lay, cooker mai dalay.

3.....3/4 spoon salt, 1 spoon each degi mirch powder ,dhaniya powder, 1/4 spoon garm Masala, 1/2 spoon haldi dalay mix karay.

4..... Oil chod nay tuk bhunay, 1 katori matar dalay mix karay, 2 glass paani dalay mix karay, ek whistle day.

5.....5 min slow fire per rakhay,Gas off karay. steam nikalnay per,500 gm paneer kaat ker dalay.

6..... Gas per rakhay ,ek boil aanay per gas off karay, lid bund karay, 5 min baad kholay is say gravy ka colour accha aata ha.

7..... Garnish with green coriander.

1.....1 kg soyabeen chapay,1/2 kg paneer ko kaat lay.

2.....1 big bowl mai 1/2 kg curd, 3_4 spoon ginger garlic paste,3/4 spoon salt ,1 1/2 spoon degi mirch, 2 spoon chaat Masala, 1/2 spoon garm Masala, 2 spoon dhaniya powder, 1 big spoon besan dalay.

3.....1/2 big spoon oil dalay, Mix karay, 3_4 hour marinate karay.

4..... Coal wala tandoor ready karay seekho mai lugaye,tandoori per rakhay, ready honey tuk.

5.... Seekho mai say nikaal ker mint chutni k saath serve karay.

5..... 2 glass panni daily, mix it, lid bundkaray,ek whistle day, sim per 10 min.rakhay.

3..... Gas per high flame per rakhay, boil annaye per gas slow fire per rakhay,

4..... 1__1 1/2 hour k liye rakhay,ya kadhi ki consistency aanay tuk.gas off karay.pyaj ki bhajiya ( pakoray) 16_18 piece dalay.

5.....10_15 min slow per rakhay.

6....ek pan mai 1/2 big spoon oil lay, garm honay per, 1 spoon sarso Dana,3_4 chopped garlic cloves, 6_7 dry hole red chilli, 15_20 karri pattay dalay.

6..... Kadi mai dalay ,rice k saath serve karay.

PUNJUBI CHICKEN

1..... ek cooker mai 1 big spoon oil lay, 4 big chopped onion dalay, light brown karay.

2.....4 big tomatoes, 8_10 garlic cloves, ginger ek piece , sub ka mixi mai paste bana lay.

3..... Cooker mai dalay,  3/4 spoon salt, haldi,garm Masala 1/2 spoon each ,dhaniya powder, degi mirch powder 1 spoon  each dalay .

4..... Oil chod nay tuk bhunay phir chicken 700 gm ,chicken powder 1 spoon, oil 1 big spoon dalay, 10 min tuk high flame per bhunay.

5..... 1 glass paani dalay, mix karay, 1 whistle day. Sim per 10 min rakhay. Steam nikalnay per serve karay.


FRIED CRISPY ARBI

1..... Peel & cut 1/2 kg arbi in french fries shape .

2..... Take 1/2 big spoon musturd oil in a kadhi. at smoking point add arbi.

3..... Add 1/2 spoon each salt, turmeric in it. cover it with lid. keep it on high flame.

4..... After every 5 min, stir it. when it become golden brown, keep the flame on slow fire.

5..... When it become crispy & little soft , add 1/2 spoon each red chilli powder, amchoor powder, mix it.

6..... Cover it with lid for 2_3 min. & serve it ,as snacks or with roti & raita.

AMBI KI CHUTNI

MY MAMI SONIA SACHDEVA'S RECIPE

AMBI KI CHUTNI

1.....take 1 kg raw mango peel it & cut it. take a kadhi add 1 big spoon musturd oil in it.

2..... At smoking point add 2 spoon whole saunf , 1/2 spoon rai , 1 spoon kasoori methi , 1/2 spoon methi Dana , 1 spoon salt , 1 spoon degi mirch powder .

3..... Add ambi in it ,cover it with lid, cook it till become soft , then add 1/2 kg gur or according to taste ,mix it ,when it melts ,& chutni become thick than,serve it with roti or rice.

RAWA CURD IDLI

#CURD, POST NO. 9

1..... Take 2 cup sooji, 4 cup curd, 1/2 spoon salt in a bowl ,mix it.

2..... Left it for 2_4 hours. Take idli stand ,grees it with little oil.

3......now add 1 packet eno in it ,& pour better in idli mold.now steam it ,till Cook.

4..... Serve idli with sambhar or chutni.

DESI GHEE

 How to make desi ghee

1..... Malai 10 min pahlay fridge say bahar nikal lay.

2 kadhi mai malai dalay haat say lugaatar golai mai hilay,jub  usmay say todha thodha doodh nikal nay lugay to butter ready hai .

3..... Ab butter mai chilled paani dalay ,malai say double,usey phir haath say hilaay.

4..... Ab kadhi mai say saara paani nikaal day, butter alag ker lay.

5.....Jo paani baccha hai WO butter milk hota hai, usey hum lussi ,kadhi cake mai use ker saktay hai.

6..... Kadhi ko gas per rakhay, high flame per,laga taar hilatay rahay. Yadi bahaar nikal nay lugay to beech mai slow per rakhay flame.

7..... Jub malai transparent ho jaaye,or neechay light brown paneer jaisay ho jaye to ghee ready hai.

8..... Channi say chaan lay,bachay paneer jaisay mixture say aap lad oo bana saktay hai, yaa cheeni dal ker bhi kha saktay hai.

NOTE..... Pahaly jub mai food prosseser ,ya hand blender say banati thi to time bhi yada lugta tha or waste bhi hota tha butter.haath say jaldi banta hai ,waste bhi nahi hota. 

MEETHI CHUTNI ( SONTH)

MEETHI CHUTNI ( SONTH)

1.....250 ML paani pan mai lay,5,6 spoon sugar ya gur ,1/4 each salt,black salt ,degi mirch, 1/2 sp bhuna jeera powder, 1/4 sp garm Masala dalay.

2.....5,6 spoon amchoor powder yaa imli paste dalay mix karay, gas per rakhay. Full flame per.

3..... Boil aanay per gas slow per rakhay. Thick honay tuk pukay.

4...... 1 spoon kharboojay k seeds bhi daal saktay hai. ( optional).

5..... Dahi bhalay k saath serve karay.

NOTE.....IS Chutni ko aap fridge mai ya fridger mai 1_2 month tuk rukh saktay hai.

 DAHI BHALAY

1.... 1 Glass white dal bhigo day 3_4 hours .phir grind ker lay.

2..... Is batter mai 1/2 spoon each salt, saboot jeera, ek chutki  heeng powder dalay. Mix karay.

3..... Ab is batter ko double honay tuk food processer mai chopper mai blend karay.

4..... ASA karnay say batter double hoker light ho jaata hai, jis say bhalay bahut soft bantay hai.

5..... Kadhi mai oil gram karay,bhalay deep fry ker lay., light brown.

6..... In bhalo ko paani mai garm garm nikaal ker daal day. Jub tuk aur tul lay.

7..... Jub doosri baari k bhalay ready ho jaye tub paani walay nikaal lay haath say press karkey,saara paani nikaal day.or 2 nd walay bhalay paani mai dalay.

8..... Dahi 1 kg fati hui lay salt 1/2 spoon mix karay, bhalay dalay bhunay jeeray ,degi mirch powder say garnish karay.

NOTE..... Garnish karnay mai aap dry fruits, besan ki boondi ,annar k danay bhi daal saktay hai. Ya stuffing mai dry fruits bhi daal saktay hai.meethi sonth ( chutni) say bhi garnish ker saktay hai.

PAHLAY HUMNAY BHAJI PULAV BANAYA ,AUB BACHI BHAJI SAY HUM PAV BHAJI BANAYEGAY.

1..... Bachi boiled veggies ko hand blender say mash keray.

2..... Ek pan mai 1/2 big spoon oil lay. 1 chopped onion, 8_10 garlic chopped light brown karay.

3..... Is may,1/2 spoon each salt, degi mirch powder,pavbhaji Masala 1 sp dalay mix karay,bhajji is may dalay.

4..... Ek boil aanay per ,10 min slow per dhuk ker rakhay.

5..... Pav butter mai sake ker bhajji k saath serve karay.

6..... Ek pan mai ek spoon butter lay, garm karay ,1/4 sp degi mirch powder dalay,BHAJI mai upper say chonk lugaaye.

7..... Chopped onion, mint chutni k saath serve karay.

BOMBAIYA BHAJI PULAV

1_1each  cauliflower,patato,tinda,ghiya capsicum,carrot,50 gm beans,5 tomatoes, 15_20 garlic cloves,2 onion.

1..... Sub veggies ko kaat lay.

2.....cooker mai 1 glass paani daal ker,phoolgobhi,aloo,ghiya tinda,beans,tomatoes, carrot dalay .

3..... Ek whistle day, gas off karay.

4..... Steam nikal nay per lid kholay.is may say half veggies panni mai say nikaal lay.

5..... Pakoray talnay wali poni( spoon) Jo hole wali hoti hai us say nikaal lay. Paani easily drain hoga us say.

6......1 glass bheegay rice mai 3/4 spoon salt,1/2 spoon haldi ,1/2 big spoon oil dalay mix karay, ek whistle day. Steam nikal nay per rice hila lay taaki chipkay nahi.

7.....ek pan mai 1 big spoon butter lay 2 onion, garlic dalay light brown karay. 1/4 spoon salt, 1 spoon pavbhaji Masala, 1/2 sp degi mirch powder dalay mix karay.

8.....Jo veggies panni mai say sperate kari thi WO is may dalay mix karay, rice dalay mix karay, 5 min dhuk ker rakhay.

9..... Garnish with tomato & cucumber.

10..... Our lunch is ready. Bachi veggies say hum dinner mai pav bhajji bana saktay hai. Recipe next time.

1......1/2 kg gaavar ki fali boil karay,haath say daba daba ker  mash ker lay.
2......Pan mai Ek big spoon oil lay, 1/2 spoon each jeera,saboot dhaniya dalay, 2 chopped onion dalay light brown karay.

3......1/2 spoon each salt,red chilli,haldi 1/4 spoon garm Masala dalay.

4...... Pan mai fali dalay mix karay, 10_15 min .dhuk ker rakhay,beech beech mai hilatay rahay.

5...... Bowl mai dalay, serve with roti.

1........In sub ko mila ker roti say thoda sa tight atta bana lay.

2.........panni dade (1 1/2) Lt. Boil karay. haath mai oil luga ker .is attay ki stick bana lay,cylindrical shape mai.

3......... Saari sticks paani mai dalay, jub sticks paani k upper aa jaye,tub 5 min slow per flame keray.

4......... Paani mai say saari sticks nikaal lay, plate mai, 1stick k 5_6 piece cut ker lay.

5.........kadahi mai 1 kadchi oil lay, 1 chopped onion ,2 green chilli light brown karay. 4 tomatoes, 6,7 garlic cloves ka paste dalay.

6......... 1/2 spoon each salt,red chilli,haldi dhaniya, garm Masala powder dalay, oil chod nay tuk bhunay.

7.........besan Kay pieces( dakray) ismay  dalay besan stick jis paani mai boil kari thi ,WO bachha paani is may dalay.

8.........ek boil aanay per 15 min slow per rakhay. Hara dhaniya chopped daal ker garnish karay.

2............ Tikki ki shape day, shallow fry karay, golden brown karay.

3........... Burger lay beech mai say cut karay , taway per oil lug ker shallow fry karay,burger ka half part lay,1 spoon chutni laugay, 2 spoon grated pattagobhi lagaye.

4........... Ek Tikki ,ek ek onion, tomato ,paneer slice ,chaat Masala chidkay,burger ka 2 nd slice upper rakhay .

5........... Mint chutni, sauce k saath serve karay.

1...........3/4 glass Lal masoor( malka) ki dal wash karay, 2 Lt paani mai bhigo day.

2...........cooker mai daal,paani sahit,3/4 spoon salt ,1/2 spoon haldi dalay, ek whistle dilay, gas off karay,steam turant nikal day.

3...........pan mai 1/2 big spoon oil lay, 1 medium size onion chopped dalay, 3 green chilli, 8_10 chopped garlic dalay, light brown karay, 3 tomatoes ki paste dalay.

4...........1/2 spoon red chilli powder dalay 1/4 garm Masala, 1/2 spoon dhaniya powder dalay ,oil chod nay tuk bhunay. Gas bund karay.

5............ Dal mai tadka dalay ,ek boil day ,serve with roti or rice. If u want add hara dhaniya also.

1...........1/2 kg mini baigan lay wash karay, 4_4 slice mai length wise cut karay.

2........... Iron kadhai lay 1 big spoon sarso ka oil lay, smoking point per gas slow per karay.

3........... 1/2_1/2 spoon each salt, red chilli powder, haldi,amchoor,dhaniya powder, 1/4 spoon garm Masala dalay,kadahi mai.

4 ...........dhuk ker galnay tuk pakay,beech beech mai hilatay rahay,yadi baigan jalnay lugay to halka sa paani ki cheet day.

5 ...........bowl mai nikaal ker roti k saath serve karay.


ALOO BOKHARAY KI CHUTNI

MY SISTER IN LAW'S RECIPE ( ASHA GROVER). 

1...........1/2 kg aloo bokharay lay,cooker mai 1 cup panni dal ker ek whistle day phir, thanda ker lay.

2........... Channi mai mash keray, gooda nikal lay.

3........... Gooda pan mai lay salt,black salt sugar ,sonth powder, Kali mirch powder, bhuna jeera powder according to taste dalay.

4............. Thick ,like imli chutni, honay per gas bund karay, serve with any snacks.


OREO BISCUIT CAKE

1.........2 pack Oreo biscuit k lay,35 Rs each.

2...........mixi jaar mai 1 spoon sugar, baking powder 1/4 spoon ,refind oil 2 spoon, milk 3/4 glass dalay ,ya according to consistency dalay ,grind karay.

3...........microwave safe bowl lay greese karay oil say ,batter is may dalay.bowl thupthapa ker flat keray.

4.............. Microwave mai 5 minute rakh ker chulay. Knife say test keray clear niklay to ready hai nahi to 1_2 min or chalay.

5.................Bhar nikaal ker 10, 15 min thunda karay,plate mai bowl ulta karay hath say thupthapa ker nikalay.

6............... Decorate karay serve karay.


MIX VEG RAITA

1......... Ek bowl mai 1/2 kg feti curd lay.

2.......... 1, boiled chopped aloo, 1,1 tomato, green chilli chopped,1/2,1/2 each carrot,kheera grated, 1/4 cup chopped hara dhaniya lay.

3...........Sub veggies ko ,1/2 spoon salt ko curd mai dalay mix karay. Degi mirch powder, bhuna jeera powder say garnish karay.

PANEER ROLL(RUMALI ROTI)






1.........1_1 carrot, capsicum, patagobhi small ,8_10 garlic, ginger ek small piece sabko grate ker lay.

2..........pan mai 4 spoon oil lay 5 min veg.ko sautay  karay. plate mai dalay 1/2 sp each salt, black pepper powder dalay mix karay.

3........... Paneer 500 gm. Slice cut ker lay. Phir ,1 sp oil taway per daal ker paneer ko shallow fry ker lay.

4.............14_16 romali roti lay.ek roti lay us per according to taste momos ki chutni, poodeena ki chutni lagaye ,3 sp mix veg. Rakhay ,phir paneer k slice rakhay, chaat Masala dalay, roti ko wrap karay. Serve with salad.

5............. Isi tarah saaray wraps bana lay.

2.....ek pav lay beech mai say half kaat lay us per apni pasand ki koi bhi chutni lagay like dhaniya ki ya momos ki ya amchoor ki meethi chutni lagay.

3..... phir aloo ko tikki shape day ker pav per rakhay ,doosara pav us per rakhay phir jasay bread pakoray besan k ghol  mai deep fry kartay hai vasaey karay.

4..... pav is ready chaat Masala upper say daal ker serve karay .


CHUTPATI MINT CHUTNEY

MINT CHUTNEY

1.....100gm roughly chopped hara dhaniya, 2bunch podeena ,1tsp Chaat Masala ,1/2 sp salt, 2 lemon ka juice, 4 green chili,water according to consistency, mixi jaar mai dalay.

2..... peesay ,nikaal lay jar mai say phir 2 cup curd daal ker spoon say mix karay.

3.....serve it with any snacks like cutlets,tikkas ,pulav etc.

Note.....salt,chill,lemon according to taste kum,jayda ker saktay hai.

Yay chutney aap fridger mai kai din tuk rukh saktay hai,without curd.

According to need kisi glass mai nikalay curd mix keray use keray.

1.....1/2 kg,gavaar ki fali cooker mai daal ker paani daal ker 1 whistle dilay.

2.....phir ,5 min slow per rakhay,steam nikalnay ker,dono sides say fali k thread nikal lay.

3.....pan mai 2 tbp oil lay,10 Kali garlic ki chopped dalay,brown karay,1/2_1/2 tsp salt,red chilli powder, haldi dalay ,fali dalay,mix karay.

4.....dhuk ker 5 min rakhay,beech beech mai helatay rahay.

5.....Serve karay garma garma chapati k saath.

1.....paneer 500gm cut karay,kadahi mai Ek kalchi oil lay.

2.....3big onion cut karay brown karay,2tsp kasoori methi ,4big tomatoes, 8_10 Kali garlic, ginger ka paste banay,,onion mai dalay.

3.....3/4Sp salt,1_1Sp dhaniya powder, degi mirch,1/4 tsp garam Masala dalay bhunay oil chod nay tuk.

4.....1_1cup milk,malai Daly,oil chod nay tuk bhunay,paneer dalay oil chod nay tuk bhunay.

1.....dahi 2 cup , bowl mai lay 1sp each tandoori Masala,dhaniya powder,dagi mirch,1/2sp salt,1/4sp garm Masala 2 tsp ginger garlic paste dalay mix karay .

2.....6_7boil aalo katay dahi mai dalay mix karay 1/2_6 hour marinate karay .

3.....pan mai. 1tbsp oil lay ,mixture dalay 5_10 min bhunay  oil chod nay tuk .

4.....roti k saath serve karay.

Note.....bahut tasty banta hai .isi recipe say aap paneer tikka,pineapple tikka,any veg ,nonveg tikka bana saktay hai

ya koi  bhi veg bana  saktay hai.

SAMBHAR________ 1small Ghia,1,1pyaz,tamatar,aloo lay cheel ker cut ker lay.1/2 katori arhar ki dal dho ker bhigo lay,sub ingredients ko cooker mai dalay,2lt.paani dalay, 1/2,1/2 sp salt,haldi,1/4 sp garm Masala dalay ,cooker bund karay 1 whistle dilay,sim pet10 min rakhay,gas off karay, steam nikalnay per kholay,1sp sambhar masala,4sp imli paste dalay ,jara see handy chala ker,halka saa mash karay  phir ek pan mai 1 big sp oil lay 1 sp sarso daana ,6,7 Lal sookhi mirchay,2 pinch heeng,15,20 kari patta dalay crackle honay per sambhar mai daal day. Serve with idli,dosa.

1.....ek chooti patta gobhi,ek Shimla Mirch  , ek gajar lay 7_8 garlic cloves ,ginger ek tukra sabko grate ker lay.

2..... pan mai ek sp oil lay saari veggies 5 min bhunay phir plate mai nikal ker,thunda keray.

3..... 1/2_1/2 sp salt & black pepper mix karay. 250 gm paneer Kay slice cut karay.

4..... 6 pav lay deep fry karay half cut karay pav per momos ki cutni ya apni taste ki chutni , 2 sp veggies mixture rakhay.

5..... phir paneer rakhay, thoda chaat masala sprinkle keray or uskay upper half pav rakhay serve karay.

Oreo Biscuit k Pakoray

1.....Maida1 cup,cornflour 2 tbsp ,salt according to taste 1/4 spoon degi mirch bowl mai lay paani daal ker batter banay .

2.....Oreo biscuit lay 2 packet ,ek ek biscuit lay batter mai dip karay deep fry karay.

3.....golden brown honay per plate mai nikal day.

4..... serve it with mint chutney or sauce.

1.....2 Cup sooji moti wali lay,pan mai sim per dry roast karay ,halki khusbu aanay tuk,plate mai nikaal lay.

2.....kadhi mai 2 kalchi oil lay 2 sp sarso Dana crackle karay, 15_20 kari patay,,7,8 dry red chilli, 2,2 sp bheegi chana dal.

3.....Urad dhuli dal,1/2  cup frozen matar , Peanut 4 sp ya apni pasand ki koi bhi veg like carrot capsicum sweet corn etc dalay light brown karay.

4.....1/2 sp salt ,bhuni sooji dalay,4 cup paani dalay mix karay ek boil aanay per dhuk ker sim per paani sookhnay tuk,ya tawa/ sooji phool nay tuk dum per rakhay.

5..... Ek katori lay spoon say usmay UPMA dalay upper tuk spoin say flat keray halkay haath say press karay,serving dish mai.

6..... katori ulti ker day ,pichay ki side say katori ko halkay haath say thup thapaye UPMA bhar aa jayega.

7.....tomato green chilli say garnish karay, serve it with sambhar, chutni.

1.....1 patta gobhi,1 carrot,1 capsicum 8 kali garlic ,ginger sabhi ko grate ker lay.

2..... pan mai 1 sp  oil lay vegetables dalay 5 min bhunay,plate mai nikalay .

3.....1/2,1/2 sp salt,black pepper dalay mix karay. 8 idli lay deep fry karay,4 bread slice lay tave per halka sa butter luga ker light brown karay dono sides say.

4..... in per green mint chutni ya momos ki chutni lagaye,phir 4 idli rakhay phir slice rakhay dusra.

5.....kisi bhi shape mai kaat ker mint chutni ya sauce k saath serve karay.






TANDOORI MOMOS

1.....50 momos readymade lay ya ghar per banaye.

2.....2cup,curd,2tbsp ginger garlic paste, 2tsp_2tsp dhaniya powder, chaat Masala,1/2_1/2tsp garm Masala salt,1tsp degi mirch powder, 2 tsp tandoori chicken Masala bowl mai lay mix karay.

3..... phir momos daal ker halkay haath say mix karay,taaki tutay nahi.

4..... phir 3_4 hour k baad stick mai laaga ker tandoor karay.

5.....plate mai dalay, serve with mint chutni
