DAL PAKWAN

SINDHI DAL PAKWAN

FOR  DAL

1.....1glass chana dal wash karay, bhigo day,2 Lt. Paani mai.

2.....cooker mai dal with water,1 spoon salt, 1/2 spoon haldi dalay.

3..... 1 whistle day, 10 min sim per rakhay,gas off karay.

4.....1 pan mai 1 kadachi oil lay,1chopped onion dalay,3 chopped green chilli dalay light brown karay.

5.....4 tomatoes,1gaanth lahsun,ek piece ginger ka paste dalay,1/4 spoon each red chilli powder, garm Masala powder 1/4 cup hara dhaniya ( optional)dalay.

6..... Mix karay , oil chod nay tak bhunay.dal mai dalay,phir say ek whistle day.

7..... Steam nikal nay per kholay,kate pyaj,imli ki chatni,pudeena chatni aur pakwan k saath serve keray.

Note..... Panni or dry masalay according to taste kum ya jayada bhi dal saktay hai,ginger garlic avoid ker sakte hai.

FOR PAKWAN

1.....2 katori maida,1 katori Multigrain atta,1kerchi refined oil,1/2 spoon ajwain,1/2 spoon salt,1/2 katori sooji sabko mix kerey.

2.....thoda thoda paani dal ker tight atta gonthy,ek ghanta geelay kapdey sey dhak ker side per rakhey.

3.....phir attay mai say ek ball/peda ley,badi patli sey patli roti belay,chakoo say beech beech mein cut lagaye.

4.....taaki roti phoolay nahi,crispy baney,garm oil mai medium flame per dono side say golden brown keray.

5.....isi tarah saaray pakwan bana lay,thand keray,khanay k liye tyaar hai.

6.....aap isey 8_10 dino k liye air tight container mai store bhi ker saktay hai.

HOW TO SERVE

1.....ek bowl mai ek kerchi dal dalye,phir ek pakwan k chotey chotey piece keray bowl mai dalye.

2.....ek ek spoon imli chatni,pudeena chatni,thodey chopped onion,fresh chopped hara dhaniya dalye.

3.....thodi dal,dono chatniya,chopped onion dhaniya phir se repeat keray,serve keray.

MINT CHUTNEY/CHATNI

1..... Take 1 cup each coriander,poodina, 2 green chilli, 1/2 spoon salt, 1 peeled,chopped raw mango or juice of 2 lemon or 1/2 spoon amchoor powder in a mixi jaar.

2.....Add 1/2 cup water in it & grind it.pour it in a  bowl.

GUR KI MEETHI CHUTNEY( SONTH)

1.....250 ML paani pan mai lay,5,6 big spoon/400 gm.gur ,1/3 spoon each salt,black salt ,degi mirch, 1/2 sp bhuna jeera powder, 1/4 sp garm Masala dalay.

2.....2 spoon amchoor powder yaa imli paste dalay mix karay, gas per rakhay. Full flame per.

3..... Boil aanay per gas slow per rakhay. Thick honay tuk pukay.

4...... 1 spoon kharboojay k seeds bhi daal saktay hai. ( optional).

NOTE.....IS Chutni ko aap fridge mai ya fridger mai 1_2 month tuk rukh saktay hai.

Amchoor or gur according to taste rukh saktay hai.

Amchoor ki jagh imli ya imli paste( mother recipe ) bhi use ker saktay hai.
