YUMMY ALOO POORI

Aaj baarish k mausam mai betay ka aloo poori khanay ka Mann hua,or hostel bhi vapis jaa raha hai kal to sochaa bana di jaye or app say bhi share ki jaye,hai to bahut simple.

1.....4 big boiled mashed aloo lay.

2.....1 kadahi mai 1/2 kalchi oil dalay, 1/2 spoon each jeera ,kasoori methi ,2 green chilli chopped dalay.

3.....1 punch heeng powder, 4 tomatoes ka paste, 1/2 spoon each salt, haldi,red chilli powder, dhaniya powder, amchoor powder dalay.

4.....1/4 spoon garm Masala, 1/4 cup chopped hara dhaniya dalay.oil chod nay tuk bhunay.

5..... Mashed aloo ,2 glass paani dalay, mix karay ek boil day, slow fire per 10_15 min rakhay.

6..... Poori Kay liye attay ka gola banay ,choti choti pooriya belay.

7..... Deep fry karay. Serve it with aloo ki sabzi, mint chutney, onion slice,any pickle.

2.....PANEER soft banana hai to1 lt,.milk mai 100 ml.malai ya cream dalay,jub boil honay wala ho tub faray,poora boil nahi karay.

3.....long & elayachi saath na rakhay.

4.....tootay egg ko boil kertay time sirka dalay, tootay ga nahi.

5.....milk mai carrot juice dalay, baccho ko acchaa lagaye ga.

6.....frozen veggies cook kertay time thodi si sugar dalay.

7..... Old ghee mai kuch daanay methi k mila day.

8.....besan k gatay banatay time besan mai oil dalay soft banaye gay.

9.....papad per both side thoda sa oil luga ker sakey.

10.....idli k better mai 1 tsp methi dana powder dalay soft banayegi.

BACHELOR'S JHUTPUT BOONDI KI SABZI ( BESAN KI PAKORI)

1.....1 Pan mai 4 cup paani ,1/3 spoon salt,1/4 each haldi, red chilli powder dalay.

2..... Gas per rakhay ek boil day 4_5 min slow fire per rakhay, 1cup besan ki BOONDI (raitay wali) dalay.

3..... Gas full karay Ek boil aanay per 2_3 min slow fire per rakhay.

4..... Serve it with garma garm roti.

Note.....aap chay to ismay oil dal nay ki zaroorat nahi hai BOONDI boil honay per apna oil chod deti hai.

1.....1 glass rice ,1/2 glass chanay ki dal ya koi bhi dal dho lay ek saath (chillay wali ya dhuli ) 1 1/2 glass paani mai bhigo day.

2..... Cooker mai dal rice  dalay, 1/2 big kalchi oil, flat  1 1/2 spoon salt, 1/3 red chilli powder, 1/4 garm Masala,1/2 spoon saboot jeera dalay.

3..... Mix karay ek whistle day,gas off karay, steam nikalnay ka wait karay.

4..... Kholay ,serve it with curd or mint chutney.

WHITE SAUCE PASTA

1.....1 kadahi mai 1/2 big spoon oil/butter lay,1 medium size chopped onion ,7_8 chopped garlic cloves dalay.

2.....2 min transparent karay, 4 full spoon maida dalay 2_3 min high flame per bhunay.

3..... Halka sa colour change honay per thoda thoda milk dalay lagatar hilatay rahay.total 2 glass milk dalay.

4..... Ganthay ( lumps) na paday , yadi lumps aa jaye to stainer mai chaan lay.

5..... Bachi hui lumps Jo stainer mai rah jaye usay bowl mai dalay, 1 glass milk dalay, spoon say lumps ko press karay.

6..... Vapis stainer mai chanay.Ab gravy ko vapis kadahi mai dalay, ek boil day. 1/2 spoon each salt, black pepper, oregano mix karay.

7..... According to packet pasta boil karay, kadahi mai dalay, 5 min tuk bhunay, ya according to taste gravy thick honay tuk bhunay.

8..... Serve it hot ,garnish it with oregano.

Note.....app chaye to ismay milk k saath 1 cup malai / cream/ cheese bhi daal saktay hai.

Aap ismay koi bhi veggies bhi daal saktay hai like brokali , red yellow bell pepper etc.

2.....oil mai paani gir jaye to1 spoon salt daal day cheetay nahi padaygi.

3...... Green chilli k danthal nikaal ker paper bag mai fridge mai rakhay.

4.....dal banatay time paani bahar na niklay iskay liye 1 spoon oil dalay.

5.....white sauce bannay k baad usmay melted butter dalay jamay gi nahi.

6.....bread hard ho jaye to bowl mai paani boil karay us per channi rakhay us per bread slice rakhay soft ho jayegi.

7.....dry coconut sugar k box mai beech mai rakhay saalo tuk khaarab nahi hoga.

8.....omelet banatay time thoda sa milk & besan milaye crispy benayega.

9.....knife ko wash kernay k bajaye kapray say ponch k rakhay.tej rehega.

10.....chashni banatay time 1 spoon ghee dalay, ladoo ,burfi easily banatay hai.

11.....aloo,onion, leafy veggies, kand wali veggies alag alag rakhay, jayda time tuk safe rahti hai.

1.....10 piece arbi k pattay wash karay. Beech ka mota danthal nikaal day.

2....20 full spoon besan,1 spoon each salt, red chilli powder, 4 spoon imli paste ya amchoor powder bowl mai dalay.

3..... Paani daal ker better ready karay, jasay pakoray k liye keray hai,takreeban 2_2 1/2 glass paani delayega.

4..... Plate mai ek leaf lay takreeban 1_1/2 big spoon besan ek leaf mai lagaye.

5..... Phir doosra patta usmay upper rakhay or better lagaye.ek k uper ek total 5 leaf rakhay.

6..... Phir tight fold karay roll bana lay. Roll k uper bhi thoda thoda besan luga day .Patilay mai itna paani boil karay jitna channi k neechay rahay,touch na karay channi ko.

7..... Channi ( stainer) patilay k uper rakhay, roll ismay rakhay dhak ker ,10_15 min steam day.

8..... Tooth pick say test keray ki besan puk gaya hai. Yadi kacha hai to thoda time or steam day

9..... Slice kaat lay,phir deep fry karay golden brown honay tuk.

10..... Serve it with sauce or mint chutney.

Note .....yadi besan kacha lagay slice kaat tay time to aap 3,4 min microwave bhi ker saktay hai.

App chaye to 3_3 leaf Kay roll bhi bana saktay hai, jasay 5,5 leaf k roll humnay banay hai.

2.... Takreeban 1 1/2 glass paani daal ker ghol bana lay.

3..... Tawa garm keray oil dalay better dal ker chillay bana lay.

4..... Dono side say oil laga ker golden brown karay.

5..... Serve it with sauce or mint chutney.

4..... Saari bhindi mai thoda thoda dry Masala bharay.

5 ek kadahi mai 1 big spoon musturd oil dalay smoking point per gas slow fire per karay.

6..... Kadahi mai bhindi dalay slow fire per light brown karay ya according to taste sirf soft honay tuk gas per rakhay.

7..... Serve it with garma garm roti.

3.....4 tomatoes big,10_15 garlic cloves ka paste dalay mix karay, 1 spoon each salt ,dhaniya powder dalay.

4..... 1/2 spoon each red chilli powder,haldi, 1/4 spoon garm Masala dalay.

5..... Mix karay oil chod nay tuk bhunay, boil chano mai dalay ek whistle day.

4.....3 glass macaroni/ pasta boiled is may mix karay, 1 cup milk,1/2 cup malai mix karay.

5..... 5 min milk sookhnay tuk gas per rakhay.

6..... Garma garm serve keray.

1.....4_5 Podeena k leaves ,1 lemon  chopped with skin.

2....1 glass mai inhay dalay, balen say beat karay halkay haath say.

3.....4 glass lay,lemon syrup (mepro) ka dalay,phir Charo glasses mai equally podina lemon with skin dalay.

4..... According to taste sugar dalay, soda water dalay mix karay.

5..... Serve it with ice.

3.....1 spoon maida mai panni dal ker better bana lay.1 plate mai 1/2 cup til dal lay.

4..... Kabab maiday mai dip karay, til mai roll karay, halkay haath say press karay .

2.....1 spoon maida ka panni mix kerkay better bana lay.

3..... Bread slice lay triangle ya rectangle, round koi bhi shape mai cut karay.

4..... Aloo ki thin layer bread slice per spread karay, thoda sa maida better spread karay,

5..... 1/2 cup til (sesame) plate mai dalay,till bread slice per spread karay, halkay haath say press karay.

6..... Isi tarah 4_5 toast ready kertay jaye,deep fry karay golden brown karay.both side.

7..... Isi tarah sarray toast ready keray,serve with sauce or mint chutni.

2..... Cutlet ki shape day according to your choice.

3.....1 spoon Maida bowl mai dalay panni dal ker better bana lay.

4.....1/2 cup sooji plate mai dalay. Cutlet balls ki maiday mai dip karay, phir sooji mai( semolina) roll karay.halkay haath say press karay.

5.....5_5 cutlet deep fry karay golden brown karay.

1.....1/2 Kg chaaps ki stick nikaal lay ,length wise cut karay, phir 4_4 piece mai cut karay.

2..... Chaaps pieces ko deep fry,golden brown karay, plate mai nikal lay.

3.....1 cooker mai 1 big spoon oil lay, 2 big chopped onion dalay light brown karay, 4 tomatoes ,10_15 garlic cloves ginger 1 piece ka paste dalay.

4.....1/2 spoon each salt, degi mirch powder, 1/4 each haldi ,garm Masala, 1spoon dhaniya powder dalay mix karay.

5..... Oil chod nay tuk bhunay. Chaaps dalay ek cup paani dalay mix karay ek whistle day.

6..... Serve with roti or rice. Gravy mai according to taste panni dal saktay hai.


AFGANI CHAAP ( CHAAP IN WHITE GRAVY)

AFGAANI CHAAP ( WHITE GRAVY CHAAP )

1.....1/2 kg soyabeen chaap wash karey,usmay say stick nikaal day, length wise cut karay, do piece may.

2.....bowl mai dalay, 2 spoon ginger garlic paste, 1/3 spoon each black pepper powder, salt, 1 cup curd,1 _1 1/2 cup malai or cream bowl mai dalay.

3..... Mix karay 8_10 hour k liye marinate karay, jaldi ho to using time bhi bana saktay hai.

4.....pan mai, 1 spoon butter ( optional) lay chaaps dalay ,ek boil aanay per gas slow fire per rakhay.

5..... Dhuk ker 10 min rakhay, gravy,curd ,cream according to taste bhi rukh saktay hai.

6..... Plate mai dalay, chaat Masala sprinkle karay .Serve it as snacks or with roomali roti.

1.....3 big potato peel karay  ,French fries ki shape mai cut karay.

2.....1 big stainer mai dalay, wash karay, 1/3 spoon salt ,6 spoon cornflour aloo k uper chirkay.stainer mai hee.

3.... Stainer mai aloo ko toss karay. Deep fry karay.Aloo light brown karay.

4..... Serve with chaat Masala.

CHINESE CHILLI PANEER

1.....1 Kg paneer square mai cut karay. 1 cup each cornflour/ araroat
Maida bowl mai dalay.

2.....1/3 spoon salt, 1 spoon degi mirch powder dalay pakoray jaisa ghol bana lay.

3..... 1 spoon garlic paste dalay mix karay, paneer dalay mix karay golden brown pakoray deep fry keray. Plate mai nikal lay.

NOTE.....In pakoro ko app mint chutni ya momos ki chutni k saath bhi asaye hi serve ker saktay hai.

In pakoray k paneer wrap ( roll) bhi bana saktay hai.

4..... Kadahi mai 1/2 big spoon oil dalay, 2 spoon ginger garlic paste dalay ek min bhunay.

5.....4 onion, 4 capsicum square mai cut karay, kadahi mai dalay ek min bhunay.

6.....2 spoon red chilli paste ya momos ki chutni dalay, salt according to taste dalay.chilli paste bhi according to taste ker saktay hai.

7.....2 spoon cornflour panni mai gholay,kadahi mai dalay mix karay, paneer dalay mix karay. Dry ya garay according to taste.

8..... Garnish with spring onion.optional.

NOTE....according to taste app chayey to soya sauce,vineger bhi daal saktay hai.

1.....1 glass white chanay 6,7 hour k liye bhigo day, ek whistle day, 15 min slow fire per rakhay.

2.....1 pan mai 1/2 big spoon oil lay, 1/2 each jeera ,kasoori,bhuna jeera powder, methi,amchoor powder,salt red chilli powder, 1/4 garm Masala.

3.....1 spoon each chana Masala, dhaniya powder dalay ek min bhunay.

4..... Boil Cholay mai tadka dalay ek whistle day.

NOTE.....Kasoori methi daltay time dhyaan rakhay ki wo jalay nahi,nahi to taste khraab ho jayega

5..... Apnay taste kay according gravy ya dry rakhay.

6..... Garnish with sliced onion, Serve with poori,rice or bhatura.

3..... Beech beech mai paani ki cheent datay rahay taaki kapda ( hankey) geela rahay.

4.....paani chaan lay, 12_14 hour mai sprouts(ankur) nikal jayegay,winters mai time double lugata hai.

5..... Sprouts nikalnay per cooker mai dalay 1 1/2 cup paani dalay, 1/2 spoon each salt, haldi dalay, ek whistle day, turant steam nikal day.

6..... Bowl mai dalay, 1 onion ,2 tomatoes chopped, 1 spoon chaat Masala, 2 lemon ka juice dalay mix karay.

7..... Serve it in breakfast or any time.

3.....10 min slow fire per rakhay. Gas off karay.

4.....1 pan mai 1/2 big spoon oil lay,1 chopped onion , 3 green chilli chopped dalay light brown karay.

5.....3 tomatoes ka paste dalay, 1/3 spoon red chilli powder dalay mix karay.

6..... Oil chod nay tuk bhunay, dal mai dalay, ek boil day , sim per 10 min rakhay.

7..... Serve with roti or rice with heeng ka aam wala pickle.

 NOTE.....App moth chawal mai imli ki chutni or kachori bhi daal saktay hai. WO bun jayega famous moth chawal kachori.

3.....kadahi mai 1 big spoon oil lay, garm karay, 1/4 spoon ajwain dalay,2 chopped onion dalay, halkay light brown karay.

4.....1 cup frozen matar, 1 spoon salt, 1/4 spoon red chilli powder dalay mix karay, 1 min bhunay.

5..... Roasted javay dalay,2 glass paani dalay mix karay, ek boil aanay per gas slow fire per rakhay.

6 dhuk ker paani sukhnay tuk gas per rakhay, gas off karay.

7..... Serve with mint chutni or sauce.

ROASTED DAL PULAV WITH SOUP

1.....Ek kadahi mai 3/4 glass Lal masoor ki dal dry roast ker lay, halka colour change honay tuk ya khushbu aanay tuk.

2.....1 1/4 glass rice 1 1/4 glass paani mai bhigo day.

3..... Cooker mai rice,1 1/4 spoon salt, 1 spoon jeera,1 big spoon oil dalay.

4..... Roasted dal wash karay rice k saath dalay cooker mai, dal bhigoni nahi hai.

5..... Mix karay ek whistle day, steam nikalnay per serve karay with soup.

6..... 16 tomatoes ko 2 glass paani k saath cooker mai dal ker ek whistle day. Stainer mai stain ker lay.

7.....1/2 spoon salt mix karay, pan mai 1/4 big spoon oil lay 5 garlic cloves, 1/2 spoon mustard seeds, 4_5 dry red chilli, 10_15 karri pattay ka chonk lugaaye.

8..... Soup mai dalay, serve with roasted dal pulav.

1.....1/2 Kg.arbi boil ker lay.1 Lt.panni daal ker. 1 whistle day, 5 min slowfire per rakhay.

2.....Chilka uttar lay. Halkay haath say press karay.

3..... Kadahi mai oil garm karay, arbi deep fry karay,golden brown karay.

4.....plate mai dalay, according to taste salt, degi mirch powder, amchoor powder dalay.ya sirf chaat Masala bhi daal saktay hai.

5..... Serve it as snacks or with roti.

NOTE.....App chaye to arbi ko dry attay ya besan mai lapate (roll) ker k bhi fry ker saktay hai.

2....is arbi kay aap paneer roll ki tarah rap bhi bana saktay hai.

2..... Cooker mai dalay ,gas on karay, ek whistle day ker, gas slow per rakhay 45 min.tuk.

3.....Steam nikal jaanay per lid khol day,pan mai 1/2 big spoon oil lay, 1 chopped onion dalay.

4.....light brown karay, 4 tomatoes, 10_15 garlic cloves ka paste bana lay, pan mai dalay.

5.....1spoon salt, 1/2 spoon red chilli powder, 1/4 garm Masala dalay, bhunay oil chod nay tuk.

6.....dal mai tadka dalay, mix karay, ek whistle day. Steam nikalnay per, ek cup malai dalay, mix karay, ek boil day.

7..... Serve it with tandoori roti or naan or rice.

INSTANT MANGO PICKLE

INSTANT MANGO PICKLE

1.....1 KG.raw mango peel or without peel cut karay, chottay,chottay pieces mai.

2.....ek kanch( glass) jaar mai mango, 1 spoon each salt, degi mirch, 1/2 spoon haldi , 2 pinch heeng powder dalay.

3.....2 big spoon mustard oil dalay mix karay. Do chaar din dhoop mai rakhay ,ready to eat.

NOTE .....App chaaye to 10_12 hour k baad bhi kha saktay hai.

Chaaye to 2 big spoon mustard powder bhi daal saktay hai, tub isay madarasi pickle bolay gay.
